Directions

  1. Prepare a whisk, a bowl, and your favorite matcha. We recommend our Yame Okumidori, which boasts a rich, deep umami and vibrant green tea flavour.
  2. Weigh 3g of matcha powder using kitchen scales and put it into the bowl.
  3. Pour 40ml of hot water (around 70°C) into the bowl. Note: Avoid using boiling water, as high temperatures release catechins, which can make the tea bitter. Keeping the water at 70°C preserves the natural sweetness of the matcha.
  4. Whisk the matcha powder and hot water together for around 15 to 20 seconds.
  5. Strain the mixture through a fine strainer to ensure there are absolutely no lumps.
  6. Pour the matcha back into the bowl, add an additional 100ml of hot water, and whisk vigorously in a zigzag motion for another 15 to 20 seconds. Once large bubbles appear, bring the whisk to the surface and whisk gently to break them down into a fine, creamy foam.
  7. Fill a 12oz cup with plenty of ice and pour in 75ml of water. Adjust the amount of water to suit your taste.
  8. Gently pour the whisked matcha over the top, and enjoy!
