In Japan, chilled noodles are a popular summer dish. The word hiyashi (冷やし) means “chilled” or “cooled”, and you’ll find it used in the names of many refreshing summer dishes.

These light and refreshing chilled noodles are served in a cool Japanese green tea broth and topped with fresh lime. Add tuna for extra protein, or keep them vegetarian with crisp cucumber and spring onions. Light and beautifully refreshing, they’re the perfect dish for a warm summer day.

Ingredients

    • 200–300 ml Japanese green tea, such as sencha, hojicha or genmaicha

    • A little Japanese dashi stock powder, to taste

    • A few ice cubes

    • 50-100g Japanese dry udon noodles

    • Fresh lime, thinly sliced

    • Tuna, sliced or flaked

    • Thinly sliced cucumber and spring onions, for a vegetarian-friendly dish

    Directions

    1. Brew your favourite Japanese tea and allow it to cool slightly.

    2. Add a little dashi stock powder to taste, then add a few ice cubes to chill the broth.

    3. Cook the noodles according to the packet instructions. Drain and rinse thoroughly under cold water to cool them and remove excess starch.

    4. Place the chilled noodles in a bowl and top with thinly sliced lime and your choice of tuna, or cucumber and spring onions.

    5. Pour over the cold Japanese tea broth.

    6. Enjoy!
