This spring, MATCHADO is excited to host a hands-on workshop where you'll learn the art of making Japanese sweets known as daifuku. Each intimate session will welcome 8 guests for 90 minutes, guiding you to make 4 daifuku: two matcha strawberry daifuku and two classic daifuku, filled with fresh strawberries and grapes.
The workshop will also include a matcha whisking tutorial, so you can enjoy a fresh cup of matcha alongside your daifuku. You'll learn where to find the best ingredients and gain the know-how to create sweets that pair beautifully with Japanese matcha.
What are Daifuku?
Daifuku are a type of wagashi (Japanese sweet) consisting of soft, chewy mochi wrapped around a sweet filling, typically red bean paste. The name ‘daifuku’ translates to ‘great luck.’ Once reserved for special occasions, these treats are now enjoyed much more regularly.
Traditionally made by grinding glutinous rice into a sticky paste, daifuku can now be prepared easily at home using store-bought glutinous rice flour. In this workshop, we'll use ingredients sourced in London from Japan Food Express and Natural Natural to show how simple it is to make daifuku once you have Hiromi's guidance and recipe.
This workshop will be led by MATCHADO founder Hiromi Matsunobu, a Japanese tea specialist and confectionery expert, sharing her skills and passion for matcha culture.
